Ingredients:
- 1 can artichokes
- 1 10 oz package frozen spinach, thawed and squeezed of excess water
- 1/2 cup mayonnaise
- 1/2 cup parmesan cheese, grated, plus a little more for the top
Directions:
- Pre-heat oven to 350 degrees
- Drain artichokes, mash and cut them into small pieces with a fork and knife. Place in mixing bowl
- Squeeze spinach of excess water and place in bowl with artichokes
- Add 1/2 cup of mayo and mix well
- Mix in 1/2 cup parmesan cheese
- Transfer mixture to small baking dish and top with more parmesan cheese
- Bake for 20-25 minutes, until the sides start to brown and bubble
Serve with crackers or on toasted baguette slices.
